Coyote (Agave americana ssp. oaxacensis) is one of the rarer americanas. The plant runs denser and more vegetal than arroqueño, takes 15-20 years to mature, grows wild on the highland-Miahuatlán hillsides where the serious wild-agave palenques operate. Solo coyote rarely ships under $70 and frequently breaks $100. NETA, Mezcalosfera, and a handful of Mal Bien single-maestro releases are the producers worth knowing. Heavy-bodied, savory, with a long mineral finish that runs closer to arroqueño than to anything in the karwinskii family.
