Sierra Negra Mezcal

Sierra Negra (Agave americana ssp. americana var. oaxacensis) is one of the heavier wild americanas. Dense, savory, structurally more substantial than arroqueño; the plant takes 15-20 years to mature and grows in highland Miahuatlán microregions. Solo Sierra Negras run $80-$120 done seriously, and the agave plays especially well at high proof or in single-batch ensambles. NETA, Mezcalosfera, El Jolgorio, and a handful of Cuish Mezcales releases are where the conversation lives.
