Verdict
A credible ensamble. Warash is an uncommon Sierra Juárez agave that the US specialty conversation has barely encountered – Chimeco's jabalí-tobalá-warash ensamble at 50% is a vocabulary-building release that earns attention on format alone. The warash adds a register the other two agaves can't reach; the composition holds without crowding. An unusual Chimeco release.
Warash is a vocabulary agave
Tasting notes
Nose: Green pepper, wildflower, herbal edge
Palate: The warash (a less-common variety) adds specificity; layered at 50%
Finish: Very long, cooling, drying
The bottom line
An unusual Chimeco release
