El Tigre Papalote - Tía Victoria
Tía Victoria's papalote at 51.9%. The highest-proof El Tigre we've tasted, and the agave carries it
Score: 4.5/5 agaves

- Agave: Papalote
- ABV: 51.9%
- Price: $200 ($$$$)
Verdict
Tía Victoria's papalote keeps the wildflower register intact at a proof that would flatten less careful distillations, this is the agave at full volume. Buy it next to Tía Gonzala's for the two-maestra comparison; El Tigre's single-hand project is one of the few places in the US market where female maestras get the label space the work earns.
High-proof papalote at maestra caliber is where the El Tigre project pays off
Tasting notes
Nose: Wildflower, warm earth, dry herb, cooling mint
Palate: Dense and aromatic at 51.9%. The highest of the El Tigre proofs we've encountered, and the agave carries it without tipping into heat or losing aromatic definition
Finish: Unending. Drying, cooling, floral, with a slow honey fade
The bottom line
Strong case for the $$$$ spend
