Verdict
The Herbal is our pick of the Ineaquidens three. It's the most honest reading of the agave – Michoacán ineaquidens leans green before anything else – and the cleanest demonstration of what the Jaramillos can do when they stop trying to flatter the drinker. If you're only buying one, buy this. If you're buying all three, drink this second, between Frutal and Seco.
Same agave, different argument – and a better one, for most sippers
Tasting notes
Nose: Mint, then rosemary, wet grass, dry pepper
Palate: 46-47% – this release pulls the ineaquidens hard toward its herbal mode; where Frutal sits sweet, Herbal sits cool and green, with a dry, almost alpine finish
Finish: Cool, herbal – long
