Verdict

If the Hacienda Oponguio Ineaquidens trio sketches the agave, Ióntki Anapu is the finished oil painting. At 50% from Cañada del Agua, this is Michoacán ineaquidens as it should be – green, mineral, slightly bitter, utterly sincere. Track it down; it's one of the best Michoacán releases on any US shelf, and a useful counterpoint to La Luna's cupreata work.

Ineaquidens at the proof it was always asking for

Tasting notes

Nose: Green herb, wet stone, pepper, roasted agave, faint cacao

Palate: 50% – Miguel Ortiz Villagomez's ineaquidens from Cañada del Agua arrives dense, green, and proof-forward, with the agave's native bitterness fully expressed and the Michoacán mineral backbone holding everything in place

Finish: Warm, dry, herbal. Stays very long

The bottom line

Make the effort. The reference Michoacán ineaquidens
