Verdict
No consensus here, so this is our read: Kilinga's añejo bacanora is a capable barrel program over a capable Sonoran base. It isn't doing what the raw bacanora category can do – the spirit itself is a Sonoran story, and barrel-aging it flattens a bit of that. Buy if you want barrel-aged agave with a Sonoran accent; buy the silvestre below for the more characterful version.
Bacanora dressed for a steakhouse, not a distillery
Tasting notes
Nose: Caramel walks in first, then dry pepper, oak, faint agave
Palate: 40% – Kilinga's añejo-style bacanora is wood-influenced and softer than the blanco; at 40% the oak does most of the talking, as it does in most barrel-aged 40% agave spirits
Finish: Sweet, oaky – medium
The bottom line
Buy silvestre within the brand; this is for oak fans
