Verdict
Palmilla is a northern agave that rarely makes it onto single-varietal bottles, which makes Los Cantiles' entry a small category contribution as well as a drinkable spirit. The 46-50% proof range keeps the agave legible. It comes through like what Derrumbes does with northern agaves: documentary, proof-honest, not trying to charm. A collector's bottle with a reason to exist.
Palmilla gets a proper bottling
Tasting notes
Nose: Cooked agave, then desert flower, warm hay, light mineral
Palate: Leaner than the bacanora sibling, with the palmilla's distinct vegetal-dry signature intact at 46-50%. The bottle sits as an honest introduction to an agave most drinkers haven't met
Finish: Medium-long, dry, herbal
The bottom line
Rare agave, fairly proofed. Track it
