Verdict

Ensambles often fail because the components lose their voices; Juan Pérez García writes each voice so clearly that the chord holds. Cupreata and inaequidens are the dominant agaves, espadincillo the connective tissue, and Etucuaro the home ground. Two reviewers at 4.5 track with our read. This is the Michoacán ensamble to open next to a NETA ensamble from Miahuatlán if you want to hear two traditions at once.

Juan Pérez García makes the case for Michoacán ensamble as its own tradition

Tasting notes

Nose: Wild herbs, roast pear, warm pine, faint salt

Palate: 46% ensamble that lands as architecture rather than average, cupreata's orchard, inaequidens' resin, and espadincillo's lean spine each stay legible. Filipino still keeps it lifted

Finish: Layered, dry-mineral – very long

The bottom line

Buy for anyone who thinks Michoacán only makes single-agave bottles
