Verdict
If Palalma's Michoacán azul made the argument for blue agave as a mezcal variety, Palomas Mensajeras seconds the motion. Different hand, similar thesis – azul fermented and distilled the mezcal way produces something that tequila's rulebook would never let exist. Reach for it alongside Palalma's bottling for a two-house azul tasting.
Two producers now prove azul deserves a second life outside tequila. This is the other one
Tasting notes
Nose: Cooked pineapple, mineral salt, citrus, black pepper
Palate: 48% of agave azul rendered with earth and smoke where most azul is polished into neutrality – glass time has rounded the edges without domesticating the character
Finish: Bright, minerally. Long
The bottom line
Blue agave under mezcal rules. Azul as it should have been all along
