Verdict
Chino is one of the less-discussed Michoacán varietals and Palomas Mensajeras' version doesn't try to oversell it. The bottle reads quiet by design – a herbal, mineral agave rendered with glass time and honesty. Reach for it in a Michoacán flight to hear the species that doesn't make the brochure.
Not every Michoacán agave wants to be loud, and chino is proof
Tasting notes
Nose: Green herb with a mineral top, faint stone fruit
Palate: 48% and gentler than most Michoacán bottles in this set – chino leans herbal and restrained, and glass-aging has dialed that register further
Finish: Dry, green
The bottom line
Reach for it in a Michoacán flight. Skip as a first bottle
