Verdict
Tuxca is a micro-region category from the Jalisco-Colima border that most drinkers will never encounter, which is exactly why bottles like this matter. Perempitz's ixtero amarillo is reference-grade work on an agave variant almost no one bottles – honest proof, clay-still, stripped of marketing. Buy when you see it; you probably won't see it twice.
Tuxca is the agave-spirit category no one is marketing, and Perempitz is why it should be
Tasting notes
Nose: Cooked agave over wet stone, green herb, wildflower, a mineral top
Palate: 45.4% of ixtero amarillo distilled in the tuxca tradition – similar to raicilla in origin but with a distinctly different profile, drier and more wet slate. Perempitz's hand is impeccable
Finish: River rock, dry, quietly complex – very long
The bottom line
Don't deliberate. One of the rarest and best bottles in this batch
