Santo Cuviso Blanco
Sonoran pacífica at 45 – a region's overdue argument
Score: 3.5/5 agaves
- Producer: Santo Cuviso
- Region: Sonora
- Agave: Pacifica
- ABV: 45%
- Price: $96 ($$$)
Verdict
Sonora's pacífica agave (bacanora's cousin) rarely makes it to U.S. shelves at this proof. Santo Cuviso's blanco is honest-to-the-region and honestly priced. Sits in the early conversation about northern mezcal that Caballito Cerrero, Derrumbes, and a handful of others are pushing. Consensus 3.6 rounds up to 3.5. Recommend.
Sonora deserves more Sonoran mezcal on U.S. shelves. This is a start
Tasting notes
Nose: Dry grass – then wet stone, faint citrus peel, a cool herb
Palate: 45% is a respectable proof for Sonoran pacífica; the desert terroir reads – drier, less smoke, more mineral, without apology. Clean, legible, specific
Finish: Cool, saline. Lingers at medium-long
The bottom line
