Verdict

Lupe López's ensamble pechuga is the only sotol-agave pechuga we've tasted, which is itself newsworthy. The 44% proof is lower than category-reference pechugas like Siete Misterios', and the poultry note sits more as accent than architecture, but the base liquid is complex enough to hold the format up. A category oddity worth tasting once for the ambition.

Pechuga built on two different plants – the format gets an upgrade

Tasting notes

Nose: Cooked agave, cedar, a warm savor, dried fruit

Palate: 44% is modest for a pechuga but the sotol-agave base carries its own complexity, the distillate adds a warm, spiced layer without overwhelming the cedar-and-cooked-plant duet

Finish: Warming, spiced – medium-long

The bottom line

Worth trying for the format. Not a desert-island pechuga
