Verdict
César 'Paco' Chagoya and Don Salomón Valdez distill at 50%, which is where sotol finally stops apologizing. The Chorreras terroir reads through every sip, a specific wet-stone mineral that you don't find in Aldama or Madera bottles. This is the sotol that converts whiskey drinkers and agave drinkers in the same pour. One of the easiest recommendations in the sotol category.
Chorreras sotol at 50% – the proof and the place in agreement
Tasting notes
Nose: Cedar, dry earth, mineral depth, a trace of smoke
Palate: 50% carries a fuller body than most sotol bottles reach, the Chorreras terroir showing in the specificity of the limestone line, the cedar and earth held in conviction
Finish: Very long, dry, river rock
The bottom line
The Sotoleros bottle to buy if you can only buy one
