Verdict

Romel works with wild agaves and stone vats, which is how the plant would prefer to be distilled if anyone asked. The steel still keeps the body leaner than Lupe López's copper lechuguilla, but the technique specificity shows in the aromatic clarity. This is a different answer to the same species, buy both and hear the method difference.

Stone-vat, mallet-crushed, steel-distilled – ancestral technique, audible

Tasting notes

Nose: Wild herb, then wet stone, a faint savor, dry fruit

Palate: 45%-52% proof range and steel distillation keep this lighter than copper-distilled lechuguillas, the wild-herb signature stays sharp, with mineral depth and a faint savory under-note

Finish: Herbal, flinty, long

The bottom line

The wild-and-steel lechuguilla. Buy alongside Lupe's version
