Verdict

Bacanora's triple-distillation tradition produces a different kind of agave spirit than mezcal, drier, leaner, less aromatic but more precise. Sunora's Blanco delivers the Pacifica's peppery-mineral signature at 42%, which is light for the category but appropriate to the style. It's an honest introduction to bacanora, even if it won't out-deliver a Cielo Rojo or Caballito Cerrero at the top of the shelf.

Bacanora is Sonora's answer, not Oaxaca's – and the answer is drier

Tasting notes

Nose: Dry pepper with cooked agave

Palate: 42% and triple distillation give this a leaner, drier profile than most mezcals – Pacifica's peppery signature survives, but the texture reads more like a clean aguardiente than a traditional agave spirit

Finish: Peppery, dry, medium

The bottom line

A credible first bacanora. Climb to Cielo Rojo for the ceiling
