Verdict
Tlamati's espadilla is the quiet argument for Puebla as a state worth tracking. Balbino and Sergio Salas work at a scale where the pine-and-stone character of the Atlapulco hills isn't sanded off, this is what espadilla should taste like when no one is trying to make it easier. Reach for it before the state gets expensive.
Balbino and Sergio Salas are making Puebla taste like Puebla again
Tasting notes
Nose: Cooked agave over wet river stone, green melon rind, a thread of charred pine
Palate: With an herbal spine the Salas family coaxes out of their mountain stills. The sweetness hits like sap, not sugar; lean and aromatic at 46.6%
Finish: Mineral, faintly green
