Verdict
Zinacantán's espadilla is one of the cleanest arguments the Puebla category has produced for American shelves. The wild agave reads deeper than domesticated espadín ever does, and the proof range (46-50%) gives the producer room to bottle at the correct strength. Consensus 4.3 is fair; we'd push slightly higher. Hunt it alongside Yuku Savi's espadilla for a Puebla-border flight.
Puebla is building a case. This bottle is the exhibit
Tasting notes
Nose: Cooked pineapple with peppery herbs, a clear mineral edge
Palate: Full and structural at 46-50%, the wild espadilla running dense and aromatic with a proof that lets every component speak. Concentrated, not aggressive
Finish: Flinty, a faint floral echo
The bottom line
A wild agave deeper than domesticated espadín. Puebla is the conversation this bottle starts
