Verdict
Zinacantán's pichomel completes the Puebla triptych (alongside their espadilla and papalometl) and holds its own at the table. The bottle is more austere than the espadilla, more understated than the papalometl, and exactly as serious. Consensus 3.8 is a notch light. Track the full Zinacantán range; the palenque has a point of view.
Rare agave, right proof – the Zinacantán formula
Tasting notes
Nose: Green herbs, then cooked agave, cold stone, a trace of citrus peel
Palate: Lean and mineral at 46-50%, the pichomel showing a drier, more vegetal register than its espadilla sibling. Structural, direct, patient
Finish: Long, dry, faintly peppery
The bottom line
The understated third of the Zinacantán triptych. A Puebla house worth following across the line
