Mezcal from Candelaria Yegole, Oaxaca

Candelaria Yegole is where modern jabalí production became legitimate. A small palenque cluster south of Miahuatlán; the Pérez and Hernández families developed the techniques to handle jabalí's high-saponin fermentation in the last decade, and the village now produces some of the most articulate karwinskii-ensamble work in the catalog alongside its jabalí. Bottles run $70-$140 done seriously. 5 Sentidos, NETA, and Mezcalosfera all source their best releases here.
