Mezcal from Ejutla, Oaxaca

Ejutla is the district covering San Agustín Amatengo, Santa María La Pila, and a half-dozen smaller villages south of Oaxaca City. Producers here tend to overdeliver at $30-$60. Ejutla mezcal runs drier and more mineral than Tlacolula bottles by a clear margin; altitude and water push every village in the district toward a leaner register. Maguey Melate, Don Mateo de la Sierra, and the Mal Bien single-maestro lineup do the legible work.
