Mezcal from Jalisco
Jalisco is the home of tequila, but its mezcal tradition runs older and quieter. The state produces raicilla under its own DO and azul-Weber-based mezcal under the broader mezcal DO – both worth attention. Jalisco mezcal, when serious, demonstrates what tequila could taste like under traditional methods; producers like Maguey Melate's Jalisco lineup, Cuentacuentos, and Fanekantsini Chato make a credible argument that tequila's industrial scaling cost the category something.
