Mezcal from San Dionisio Ocotepec, Oaxaca

San Dionisio Ocotepec is the volume center of mid-Oaxacan mezcal. A Tlacolula-district village with dozens of palenques, San Dionisio espadín ranges from $20 commercial bottles up through $80 single-maestro releases. The terroir runs sweeter and more cooked-agave-forward than highland Miahuatlán, less smoky than Matatlán – a middle register that food-pairs unusually well. Banhez, Doña Juana, Don Mateo de la Sierra, and most of the Tlacolula commercial-tier labels source through here.
