Jabalí (Agave convallis) is the wild agave that 'modern jabalí production got legitimate' is shorthand for. The plant has a high-saponin profile that breaks fermentation in unpredictable ways – most producers tried it, most producers failed, and only in the last decade have a small number of palenques in Candelaria Yegole and adjacent villages developed the techniques to make jabalí work consistently. The signature when it works: dry, savory, mineral, with a pronounced umami undertone. Bottles cost $70+ and are among the most distinctive solo expressions in the catalog.
