Mezcal from San Luis Potosí

San Luis Potosí is mezcal's high-altitude argument. The state's signature plant is salmiana – vegetal, mineral, herbal, with nothing of Oaxacan sweetness – and SLP also produces some of the most articulate Mexican verde bottlings on the US market. The producers leading this conversation include Derrumbes, Legendario Domingo, Metiche, and Machetazo. SLP mezcal tends to land in the $40-$60 band; the dollar-per-experience math is unusually strong here for drinkers who already know they don't want Oaxaca.
