Espadilla Mezcal

Espadilla is regional vocabulary for a smaller, leaner espadín. Same Agave angustifolia species as cultivated espadín, but with a smaller piña and a drier profile – the working agave in non-Matatlán village bottlings, especially across Oaxaca's mountain regions. Espadilla bottles read more mineral than commercial espadín; the wild-vs-cultivated distinction shows in the glass. Most production comes from sub-Miahuatlán palenques and the Mal Bien single-maestro lineup.
