Azul Mezcal

Azul is the tequila agave (Agave tequilana) – rarely the headline plant in mezcal, and when it is, the bottle is usually arguing against industrial tequila. Done seriously, azul mezcal demonstrates what tequila could taste like under artesanal methods: cooked-pineapple sweetness without sharp ester edges, a finish carrying minerality where commercial tequila carries alcohol. Most credible azul mezcal comes through Jalisco-based producers (Cuentacuentos, Fanekantsini Chato) or Oaxacan palenques running occasional azul ferments alongside their espadín work.
