Pacifica Mezcal

Pacífica (Agave angustifolia ssp. pacifica) is desert-coast espadín – the same species cultivated in Oaxacan rows, but adapted to the arid Pacific climate of Sonora, Sinaloa, and the western Sierra Madre. Most pacífica arrives as bacanora rather than mezcal under DO rules; the agave-and-method conversation overlaps. Drier, more austere, more mineral than Oaxacan espadín. The climate does the work. Sunora, Bacatt, Aguamiel, and Yoowe anchor the producer pool.
